Kiritanpo

Japanese Yam Stew

Tazawako pork

  • Kiritanpo

  • This is a typical local dish in Akita Prefecture.
We wind regular mashed rice around a Japanese cedar rod like chikuwa (tube-shaped fish-paste cake) and roast it.We then remove it from the rod and cut it up so that it is easy to eat.
We make this dish using Akitakomachi rice. Akitakomachi rice is a leading brand of Akita Prefecture. This is an extremely high quality type of ri ce with a great taste and stickiness. This is rice that is not thick despite its good flavor.
This means you can eat it with a refreshing feeling without it lying heavily on your stomach. This is rice that is especially recommended for women.

  • Japanese Yam Stew

  • Japanese yam stew was developed as a local specialty by chefs in Lake Tazawa.
Japanese yam produced in Lake Tazawa is characterized by its strong stickiness.
This is especially popular as a high grade ingredient in the Kansai region.

  • Tazawako pork

  • Tazawako pork is raised at the foot of Mt. Akita-Komagatake.
This is pork characterized by its smooth, tender meat quality and the sweetness of its fat.
We serve this in light soy milk shabu shabu (thinly sliced meat boiled quickly with vegetables) in Aoni Sanso.
